Chef Will is our food guru. Chef Will will teach you how to use nutrition recommendations and delicious foods. Gone are the days of “diet foods.”

The CENTRE: Did you always know that you wanted to be a dietitian?
WC: To be honest, I never really planned to become a dietitian. I grew up working in my family’s bakery then started a long career working in various kitchens.When I started thinking about college there were two things I knew; I love working with food and I am a dedicated athlete. To this day both of these passions are still true. Ask anyone who knows me and I’m sure they will describe me as a chef and soccer player. So when it came to college, I decided to follow my passion for food. I went to Johnson & Wales University where I received my associate’s in culinary arts and my bachelor’s in culinary nutrition. Before I knew it, I was drawn to nutrition. Soon, it became clear the combination of my culinary skills with my nutrition knowledge is key to helping my clients reach their goals.
The CENTRE: What do you love to learn about?
WC: Like most chefs, I love learning about new foods, new cooking techniques, functional medicine, and optimizing clients’ nutrition. I like learning what makes people tick, as in what pushes people to make certain choices. Outside of the nutrition world, I am a very creative person. I love spending time learning woodworking, gardening, building, making the perfect sourdough bread, and homebrewing.
